Called Lost Fino, this is a rich but dry and mature style of Jerez Fino, about 8 years old, bordering on a Fino-Amontillado that is rarely seen today. Deep gold colour, intense flor character, a combination of appley aromas and the yeasty aromas of bread dough, with a rich, ample and profound palate which finishes clean and fresh. Its rich flavour would stand up well to many foods. This includes many shellfish such as langoustines, crab, or red tuna stewed with onions. It will accompany most cheeses well too. This wine as been minimally treated to get the maximum flavour into the bottle.

Since 1781 Sanchez Romate has been family-owned and established in the same Bodegas in the town of Jerez de la Frontera. With vineyards in the Balbaina district on deep chalky soil and extensive soleras of Fino, Amontillado, Oloroso and Pedro Ximenez, Sanchez Romate are one of the few independent Sherry makers with control over the whole process from vineyard to bottle.
